Method

  1. Remove stalks and deseed chillies.

  2. Roughly chop green chilli, garlic, lemongrass and spring onion stalks. Add to food processor.

  3. Add remaining ingredients to food processor and blend, scraping down sides as needed, until a paste forms.

  4. Taste and adjust seasoning as needed.

  5. Use as needed in soups, curries, sauces, etc. Store in refrigerator or freeze in an ice cube tray.
