Vinegar-Free Hot Sauce

Wearing gloves, wash and remove stems from chili peppers. For a milder sauce, remove seeds as well. Roughly chop chili peppers.

Peel garlic cloves and roughly chop.

Add all ingredients to a food processor and blend for approx 2 minutes, or until smooth. If needed, add more water until you achieve a sauce-like consistency.

Transfer to a sterilized airtight container or jar. Store in fridge for up to 2 weeks.
Heat-treating your hot sauce may help increase its shelf life. In a pan, add hot sauce and cook over a medium high heat until it reaches a temperature of 82°C/180°F for a few minutes. Transfer to a sterilized jar while still hot.
